Crunchy Dark Chocolate Almond And Rice Clusters

If you love a sweet treat that’s also a little salty and super crunchy, you’re going to love these crunchy dark chocolate almond and rice clusters. I first made these on a lazy afternoon when I was craving something chocolatey but didn’t want to bake and now I make them all the time! They’re rich, satisfying, and so easy to throw together. You only need a few ingredients, and the best part? No oven required!

These clusters are perfect for after-school snacks, a quick dessert, or even a little gift bag for friends. Let’s get into it!

Method

1. Melt the Chocolate

Start by placing your dark chocolate chips in a microwave-safe bowl. I recommend using good-quality chocolate like @hukitchen dark chocolate gems for a rich flavor. Microwave the chocolate in short bursts about 20 to 30 seconds at a time stirring well after each round. Keep repeating this until the chocolate is fully melted and smooth. Be careful not to overheat it, as chocolate can burn quickly. The key here is patience and gentle heat. If you prefer, you can also melt the chocolate using a double boiler on the stovetop.

2. Mix It All Together

Once your chocolate is silky and warm, it’s time to add the crunch! Pour in the rice puffs and roasted salted almonds. Use a spatula or large spoon to gently fold everything together. Make sure each puff and almond piece is well coated in chocolate. Take your time here it’s important to get an even mix so each cluster has the perfect balance of chocolate, puff, and nut in every bite.

3. Form the Clusters

Next, line a baking tray with parchment paper to keep the clusters from sticking. Using a spoon or small cookie scoop, drop spoonfuls of the mixture onto the tray, shaping them into little clusters. You don’t need to be too precise they’re meant to look a bit rustic and fun! Just make sure they’re roughly the same size so they chill evenly.

4. Finish with a Sprinkle

While the chocolate is still soft, sprinkle a tiny pinch of flaky sea salt over the top of each cluster. This step is optional but highly recommended. The salt really brings out the richness of the chocolate and adds that addictive sweet-and-salty vibe.

5. Chill and Set

Finally, place the tray of clusters into the freezer for about 10 minutes. This helps the chocolate set quickly and gives the clusters that perfect snap when you bite into them. Once they’re firm to the touch, you can take them out and enjoy! Store any extras in the fridge or freezer to keep them fresh and crunchy.
