Giant Banana Oat Pancake For Breakfast

There’s something so satisfying about starting your day with one big, fluffy pancake. It feels like a treat, but this one is actually good for you. I call it my giant banana oat pancake, and it’s one of my favorite weekday breakfasts. Even better it comes together in a blender. No whisking, no fuss. Just a handful of ingredients, a quick blend, and into the pan it goes. The texture is soft, the flavor is cozy, and you can dress it up however you like.

Method

1. Blend It Up

Start by gathering all your ingredients and adding them to a blender. Toss in half a ripe banana, one egg, a quarter cup of rolled oats, half a teaspoon of baking powder, and a pinch of cinnamon. Blend everything until the mixture is smooth and creamy. The batter should be slightly thick, not runny. That texture gives the pancake a soft, cake-like feel once cooked. If your batter looks too thick to pour, you can add a tiny splash of milk or water just a teaspoon or so to loosen it up. But usually, the banana and egg provide enough moisture to keep it pourable.

2. Prep Your Pan

Place a nonstick skillet or frying pan over medium-low heat. Let it warm up for a minute or two before adding any grease. Then lightly coat the surface with butter or oil just enough to prevent sticking. This step is important, especially since this pancake doesn’t have any flour to give it structure. Using a nonstick pan and greasing it well will help you flip the pancake without breaking it.

3. Pour and Spread

Once your pan is hot and ready, pour the batter directly into the center. Use the back of a spoon or a silicone spatula to gently spread the batter out into a large circle. Unlike traditional pancake batter, this one won’t spread on its own, so shaping it right away helps get that nice, even thickness. Aim for a pancake that’s about 6–7 inches wide. Spreading it too thin can make it fragile, so try to keep it thick enough to hold together while still cooking evenly.

4. Cook and Flip

Let the pancake cook on the first side for about 2 to 3 minutes. You’ll know it’s ready to flip when small bubbles start to form on the surface and the edges begin to look firm. Take your spatula and slide it gently underneath the pancake. Flip it in one confident motion. Cook the second side for another 2 to 3 minutes, or until golden brown. You want both sides to have a nice, even color without burning. If it’s browning too fast, lower the heat slightly and give it a little more time.

5. Serve and Enjoy

Once your pancake is done, carefully slide it onto a plate. It’s best enjoyed warm, fresh off the pan. At this point, you can top it however you like. I went with dark chocolate chunks and a handful of fresh raspberries, but you can make it your own. This single-serving pancake is soft, lightly sweet, and ready for any topping you’re in the mood for.

Ingredients

  • 1/2 ripe banana

  • 1 egg

  • 1/4 cup rolled oats

  • 1/2 teaspoon baking powder

  • A pinch of cinnamon

  • Butter or oil for the pan

Directions

  • Blend it up. Add the banana, egg, rolled oats, baking powder, and cinnamon to a blender. Blend until smooth and creamy. The batter will be slightly thick just how we want it.
  • Prep your pan. Heat a nonstick skillet over medium-low heat and lightly grease it with butter or oil.
  • Pour and spread. Pour the batter into the pan. Use the back of a spoon to gently spread it into a large, even circle. It should look like one giant pancake.
  • Cook and flip. Let it cook on the first side for about 2–3 minutes, until bubbles form and the edges look set. Carefully flip with a spatula and cook for another 2–3 minutes, or until golden on both sides.
  • Serve and enjoy. Slide your pancake onto a plate, top however you like, and dig in while it’s warm.

Notes

  • Don’t use too much heat. Medium-low is key. Too hot, and your pancake might burn on the outside before it’s cooked through.
  • Spread gently as it won’t spread on its own, so use a spoon or spatula to even it out right after pouring.
  • Flip with confidence. Wait until the pancake looks set and bubbles have formed before flipping, or it might break apart.
  • Use a nonstick pan. Trust me this makes flipping so much easier, especially without added flour.

Serving Suggestions

I kept it simple and topped mine with a few pieces of dark chocolate and fresh raspberries. But you could also try

  • A drizzle of maple syrup or honey
  • Greek yogurt and sliced strawberries
  • Nut butter and chopped nuts
  • A dollop of whipped cream for a little extra fun
  • Blueberries, chia seeds, or a light dusting of powdered sugar

Fun Fact

Did you know rolled oats are just whole oat groats that have been steamed and flattened? They’re packed with fiber and help keep you full longer, making them a perfect base for breakfast recipes like this one.

Conclusion

This giant banana oat pancake is the kind of breakfast that feels like a weekend treat, but it’s easy enough to make any day of the week. It’s wholesome, satisfying, and endlessly customizable. Plus, you only need one bowl (well, a blender) and a few pantry staples. Go ahead make yourself a pancake. You deserve it.
