Strawberry Banana Pancake Bites

If you’re looking for a fun and easy breakfast to kick off the weekend, these Strawberry Banana Pancake Bites are the cutest little treat! They’re soft, fruity, and just sweet enough to make your morning feel extra special. I love making these on Fridays or slow weekend mornings they’re quick to whip up, super kid-friendly, and absolutely delicious with a drizzle of maple syrup. Let’s dive into the bite-sized goodness!

Method

1. Blend the Batter

To get started, you’ll first make the pancake batter. In a blender, combine 1 ripe banana, 1 egg, ½ cup of your preferred milk (I used almond milk), ½ cup of rolled oats, ½ teaspoon of baking powder, and ¼ teaspoon of cinnamon. Blend everything together on high until the mixture is completely smooth and creamy. This will be your fluffy, lightly sweet pancake batter. Make sure there are no lumps or whole oats left it should look like a pourable smoothie.

2. Slice the Fruit

Next, take your extra banana and a few fresh strawberries. Using a sharp knife, carefully slice them into thin, even rounds about ¼-inch thick works best. You want the slices to be thick enough to hold their shape but not so thick that they won’t cook through. These slices are the “bite” part of the pancake bites, so try to make them uniform for even cooking.

3. Dip and Cook

Now it’s time to heat things up. Place a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter. While the pan warms up, dip each slice of fruit into the batter, making sure it’s fully coated on all sides. Let any excess drip off gently. Then, lay the coated fruit slices flat onto the hot skillet. Don’t crowd the pan give them space to cook and flip properly.

4. Flip and Finish

Let the pancake bites cook on one side for about 2 to 3 minutes, or until you see the edges starting to set and the bottoms turning golden brown. Use a thin spatula to gently flip each one over and cook the other side for another 1 to 2 minutes. They should be nicely golden on both sides and firm enough to hold their shape. The fruit inside will get warm and a little gooey yum!

5. Top It Off

Once all your bites are cooked, transfer them to a plate. Now comes the fun part toppings! Add a few extra slices of banana and strawberry on top, dust with powdered sugar, and drizzle with maple syrup. You can also serve them with a side of Greek yogurt for dipping or even a scoop of nut butter if you want to add richness and protein.

Ingredients

  • 1 ripe banana

  • 1 egg

  • ½ cup milk of choice (I used almond milk)

  • ½ cup rolled oats

  • ½ teaspoon baking powder

  • ¼ teaspoon cinnamon

  • 1 extra banana, sliced

  • A few strawberries, sliced

  • Optional Toppings

  • Extra banana slices

  • Extra strawberry slices

  • Maple syrup

  • Powdered sugar

Directions

  • Blend the batter
In a blender, add 1 ripe banana, the egg, milk, oats, baking powder, and cinnamon. Blend until the mixture is smooth and creamy. This is your pancake batter!
  • Slice the fruit
Grab your extra banana and strawberries, and slice them into thin rounds. These will be the base of your pancake bites.
  • Dip and cook
Heat a greased non-stick skillet over medium heat. Dip each fruit slice into the batter so it’s fully coated, then place it gently on the skillet.
  • Flip and finish
Cook for about 2–3 minutes on one side, or until golden, then flip and cook the other side. You should see a nice golden crust.
  • Top it off
Once cooked, stack the bites on a plate and top with more fresh fruit, a little powdered sugar, and a drizzle of maple syrup if you like it sweet!

Notes

  • Don’t slice the fruit too thick it won’t cook evenly and might fall apart when flipping.
  • Make sure the skillet is hot before adding the fruit, so the batter sets quickly and doesn’t run.
  • Don’t overcrowd the pan. Give each fruit slice some space to cook and flip without sticking.
  • Use a non-stick pan or grease it well. Otherwise, the batter might stick to the surface.

Serving Suggestions

  • Serve with a warm mug of tea or milk for a cozy morning.
  • Add a dollop of Greek yogurt on the side for extra protein.
  • These are great as finger food for kids or as a snacky brunch option.
  • You can even pack them in a lunchbox!
