Cold Brew Overnight Oats

If you’re someone who needs that morning coffee and a solid breakfast to get going, these Cold Brew Overnight Oats are perfect for you. They’re creamy, chocolatey, and give you that nice caffeine kick without needing to wait for a pot to brew. I started making this recipe on busy mornings when I needed something fast but still filling and now it’s one of my favorite go-to breakfasts. Plus, no cooking needed!

Method

1. Mix the Dry Ingredients

Start by grabbing a small bowl or a jar with a lid something that can go in the fridge overnight. In the container, add ½ cup of rolled oats, 1 teaspoon of chia seeds, and 1 teaspoon of cocoa powder. Use a spoon to mix these dry ingredients together evenly. The chia seeds are key for thickening the oats while they soak, and the cocoa powder gives that nice chocolate flavor.

2. Add the Liquids

Next, pour in ½ cup of cold brew coffee and ¼ cup of your favorite milk (I love using almond or oat milk for a creamy texture). Give the mixture a good stir so the dry ingredients start blending with the liquid. It’s important that everything is well combined here, especially the cocoa powder, so it doesn’t clump.

3. Sweeten and Flavor

Now, drizzle in 1 tablespoon of maple syrup and add a splash of vanilla extract. These two ingredients bring out the rich, dessert-like flavor of the oats. Stir again, making sure all the ingredients are evenly distributed and the oats are fully soaked.

4. Chill the Oats

Once everything is mixed together, cover the bowl or jar tightly with a lid or plastic wrap. Place it in the refrigerator and let the oats soak for at least 4 hours, but overnight is even better. This gives the oats time to absorb the liquid and flavors while the chia seeds create a nice, pudding-like texture.

5. Add the Toppings and Serve

When you’re ready to eat, take the oats out of the fridge. Give them a little stir, and if they’re too thick for your taste, you can add a splash of milk. Then, top your oats with anything you love my favorite combo is a dollop of whipped cream or coconut yogurt, a sprinkle of chopped dark chocolate, some crushed walnuts, and a drizzle of almond butter. These toppings add texture, creaminess, and that extra yum factor.

Ingredients

  • ½ cup rolled oats

  • 1 tsp chia seeds

  • 1 tsp cocoa powder

  • ½ cup cold brew coffee

  • ¼ cup milk of choice (I like almond or oat milk)

  • 1 tbsp maple syrup

  • Splash of vanilla extract

  • Toppings (optional but amazing)

  • Whipped cream or coconut yogurt

  • Chopped dark chocolate

  • Walnuts

  • Drizzle of almond butter

Directions

  • Grab a bowl or jar. Add the oats, chia seeds, and cocoa powder. Mix the dry stuff first.
  • Pour in the cold brew coffee and your milk of choice. Stir it up!
  • Add in the maple syrup and a splash of vanilla extract. Stir again until everything looks nice and mixed
  • Cover the bowl or jar and place it in the fridge. Let it chill for at least 4 hours overnight is best!
  • When you’re ready to eat, top with whipped cream or coconut yogurt, a few chopped walnuts, a sprinkle of dark chocolate, and a little almond butter drizzle.

Notes

  • Don’t skip the chia seeds they help thicken the oats!
  • Make sure to mix really well so no clumps of cocoa powder are left.
  • Use a jar or container with a tight lid if you’re storing it overnight to keep it fresh.
  • Let it sit at least 4 hours, or it won’t be creamy enough.

Serving Suggestions

  • On the go? Just pop the lid on your jar and take it with you.
  • Extra indulgent? Add a spoonful of Greek yogurt for more protein.
  • Hot version? Warm it up for a few seconds in the microwave (but I really recommend it cold it’s better that way with the coffee!).
  • No nuts? Skip the walnuts and use sunflower seed butter instead.

Fun Fact

Did you know cold brew coffee is made by steeping coffee grounds in cold water for 12–24 hours? That’s why it’s smoother and less acidic than regular hot coffee. It also pairs perfectly with chocolate and oats!

Conclusion

These Cold Brew Overnight Oats are like breakfast and coffee all in one. They’re rich, satisfying, and perfect for mornings when you just want to grab and go. I love making a batch the night before and waking up to a ready-made treat. Whether you’re fueling up for school, work, or just a cozy day at home, this is one breakfast that won’t let you down.
