Soup Dumplings in Japanese Curry Sauce  A Delicious Fusion

I absolutely love experimenting with different flavors, and when I came across a spicy sesame soup dumplings recipe from @cabbages.world, I was hooked! After adding a bit of chocolate um, I mean Japanese curry blocks, which are packed with amazing flavor it was a match made in heaven. Now I’ve found a fun, new way to enjoy soup dumplings, and I can’t wait for you to try it too!

Method 

Sautéing the Onions 

Start by heating a little oil in your claypot (or deep skillet). Once the oil is hot, add the sliced onions and sauté them for about 5 minutes. Stir occasionally to ensure they don’t burn, and cook until they soften and turn a little translucent. This step adds a savory base to your curry sauce and enhances the flavor.

Creating the Curry Sauce 

Once your onions are soft, pour in 1.5 to 2 cups of water into the pot. After that, add the chopped curry block, dashi, minced garlic, light soy sauce, mirin, and sugar. Stir the mixture occasionally to help the curry block dissolve completely and combine all the ingredients into a smooth sauce. Bring the entire mixture to a boil over medium heat, allowing the flavors to meld together.

Cooking the Soup Dumplings 

After the curry sauce has come to a boil, carefully add the frozen soup dumplings into the pot. These will cook directly in the curry sauce, infusing the dumplings with flavor. Reduce the heat to a simmer, and cover the pot with a lid. Allow the dumplings to cook according to the instructions on the packet. For my dumplings, I let them cook for about 15 minutes. However, if you find that the tops of the dumplings still appear uncooked, continue simmering them for a bit longer to ensure they’re perfectly cooked.

Finishing Touches and Toppings 

Once the soup dumplings are fully cooked, uncover the pot and check to make sure everything looks good. Then, top the curry-filled dumplings with freshly chopped spring onions, a sprinkle of shichimi togarashi for a little heat, a drizzle of chilli oil for extra flavor, and a dash of aonori to add some umami. If you prefer a spicier kick, feel free to add more chilli oil to taste. The toppings elevate the dish and add a vibrant, flavorful finish to your creation.

Directions

  • Once the onions are a little soft, pour in the water and add all the other ingredients curry block, dashi, garlic, soy sauce, mirin, and sugar. Bring it to a boil, stirring occasionally.
  • Carefully drop in the frozen soup dumplings. Reduce the heat to a simmer, cover the pot, and let the dumplings cook according to the package instructions. For my dumplings, I cooked them for 15 minutes. If the tops still look uncooked, give them a little more time.
  • Once cooked, uncover the pot and top with spring onions, shichimi togarashi, chilli oil, and aonori for that perfect finishing touch. If you like it spicy, feel free to add more chilli oil to taste!

Notes

  • Make sure to stir the curry sauce occasionally while bringing it to a boil to prevent it from sticking to the pot.
  • If you’re using a claypot, be cautious with the heat, as they tend to retain warmth and may cook food faster than regular pots.
  • For best results, cook the soup dumplings as instructed on the package. Overcooking them can make the dumplings break open, which will affect the soup inside.
