Miso Marinated Salmon With Nyumen

When the weather is hot, I love a dish that’s quick, easy, and bursting with flavor. This Miso Marinated Salmon with Nyumen is the perfect recipe for those days when you want something light but satisfying. The salmon, marinated in a delicious miso-based sauce, pairs perfectly with somen noodles in a rich, savory broth. And with the help of the Panasonic Combi Oven, I can get everything ready in less than 25 minutes! Trust me, you’ll be coming back for seconds.

Method

1. Marinate the Salmon

Start by preparing the marinade. In a bowl, combine the white miso, light soy sauce, sugar, mirin, sake, and grated ginger. Stir these ingredients well to create a smooth paste. Once the marinade is ready, add the salmon fillets to the bowl, ensuring each fillet is thoroughly coated with the miso mixture. Let the salmon marinate for at least 30 minutes to absorb all the flavors. If you have extra time, you can marinate the fish for up to a couple of hours to intensify the flavor.

2. Cook the Salmon

Next, preheat your Panasonic Combi Oven to 200°C using the Steam and Oven function. Take the salmon fillets and place them on a baking tray lined with parchment paper. Be sure to remove any excess marinade to prevent it from burning during the cooking process. Once the oven is preheated, place the baking tray in the middle rack and cook the salmon for 10-12 minutes. Afterward, switch the oven to the Grill function, and move the tray to the top rack. Let the salmon grill for another 2-3 minutes, or until the top is golden brown and slightly crispy. Keep an eye on it to avoid overcooking.

3. Prepare the Broth

While the salmon is cooking, it’s time to prepare the broth. In a microwave-safe bowl, combine the water, dashi powder, sugar, soy sauce, and mirin. Stir well to ensure that the dashi powder and sugar dissolve completely in the water. Place the bowl in the microwave and cook it on high for 1 minute or until the broth is hot and fragrant. This will serve as the base for your Nyumen.

4. Prepare the Noodles

Now, focus on the somen noodles. In another microwave-safe bowl, add the somen noodles and cover them with boiling water. Place the bowl in the microwave on medium heat and cook for about 1 minute, ensuring the noodles are slightly undercooked since they will continue to cook when added to the hot broth. Once the noodles have softened slightly, drain them in a sieve and rinse them under cold water to stop the cooking process.

5. Assemble the Dish

Once all components are ready, it’s time to assemble the dish. Begin by placing the cooled somen noodles into a bowl. Next, pour the hot broth over the noodles. Then, gently place the cooked salmon fillet on top of the noodles. To finish, garnish the dish with chopped spring onions, seaweed, and sesame seeds. For an extra boost of flavor, drizzle the leftover miso marinade (thinned with a little water) over the salmon. If you prefer, you can heat the marinade in a small saucepan over medium heat until it thickens slightly before drizzling it on top.

  • Cook the Salmon

Place the salmon fillets on a baking tray lined with parchment paper, making sure to remove excess marinade to avoid burning. Bake the salmon for 10-12 minutes. Heat on medium in the microwave for about 1 minute, making sure to slightly undercook the noodles since they will continue to cook in the broth. Once done, drain the noodles in a sieve and rinse them under cold water to stop the cooking process.
  • Assemble the Dish

For an extra kick of flavor, drizzle the leftover miso marinade (thinned with a little water) over the salmon. You can also heat it in a saucepan to thicken it slightly.

Notes

  • Marination Time  If you marinate the salmon for too long, the miso flavor can become overwhelming. 30 minutes to a few hours is ideal.
  • Grilling the Salmon  Keep an eye on the salmon when it’s under the grill function of the oven. It can quickly go from golden to burnt if left for too long.
  • Noodle Texture  Make sure not to overcook the noodles, as they will soften further once added to the hot broth.
