Prettiest Blue Spirulina Chia Pudding

There’s something magical about a breakfast that looks as dreamy as it tastes. That’s exactly how I feel about this blue spirulina chia pudding. It’s light, creamy, naturally sweet, and that gorgeous blue hue? Total showstopper. I first made this on a quiet morning when I wanted something that felt a little extra  and now it’s one of my favorite make-ahead breakfasts. It’s packed with nutrients, super easy to prep, and tastes like a tropical treat with every bite.

Method

1. Combine the Dry Ingredients

Start by adding 3 tablespoons of chia seeds and 1/2 teaspoon of blue spirulina powder into a small mixing bowl or jar. This step is important because it allows the dry ingredients to evenly disperse before introducing any liquids. The spirulina powder can clump if not mixed well early on, so giving it a quick stir with the chia seeds helps set a good base for a smooth pudding.

2. Add the Liquid Ingredients

Next, pour in 2/3 cup of full-fat coconut milk, followed by 1 tablespoon of coconut yogurt, 1 tablespoon of maple syrup, and a splash of vanilla extract. The coconut milk gives the pudding a creamy base, while the yogurt adds extra richness and a subtle tang. The maple syrup brings sweetness without overpowering the other flavors, and the vanilla rounds it all out with a soft, warm note.

3. Stir Thoroughly

Using a spoon or small whisk, stir the mixture thoroughly. Make sure the spirulina powder fully dissolves and no clumps of chia seeds remain. This step ensures everything is well blended and the bright blue color is evenly distributed throughout the pudding. Don’t rush here  a good stir at the beginning prevents gritty texture later.

4. Let It Sit and Stir Again

After your first mix, let the pudding sit uncovered for about 5 minutes. During this time, the chia seeds begin absorbing the liquid and start forming a gel-like consistency. After 5 minutes, stir the mixture again. This second stir is crucial  it breaks up any seeds that may have sunk to the bottom or stuck together, giving the pudding that perfectly smooth and even texture.

5. Refrigerate

Cover the bowl or jar with a lid or wrap, and place it in the refrigerator for at least 1–2 hours, though overnight is ideal. The longer chill time allows the chia seeds to fully expand and thicken the pudding. If you’re making it at night, just pop it in the fridge and it’ll be ready to go in the morning  no extra effort needed.

6. Final Stir and Add Toppings

Once the pudding has chilled and thickened, take it out of the fridge and give it one final stir. This helps loosen the texture a bit if it’s become too firm. Then it’s time for the fun part  toppings. I usually top mine with a spoonful of coconut yogurt, fresh blueberries, a handful of granola, coconut flakes, and a drizzle of honey. You can mix and match with whatever you love.

Ingredients

  • 3 tablespoons chia seeds (I use Bob’s Red Mill)

  • 1/2 teaspoon blue spirulina powder (I love the one from KOS)

  • 2/3 cup coconut milk (full-fat for creaminess)

  • 1 tablespoon coconut yogurt (Cocojune is a favorite)

  • 1 tablespoon maple syrup

  • Splash of vanilla extract

  • Toppings (optional but recommended)

  • A spoonful of coconut yogurt

  • Fresh blueberries

  • Granola

  • Coconut flakes

  • Honey drizzle

Directions

  • In your bowl or jar, add chia seeds and blue spirulina powder. Stir to combine.
  • Pour in the coconut milk, then add the coconut yogurt, maple syrup, and a splash of vanilla.
  • Mix well until everything is smooth and the spirulina is evenly distributed.
  • Let it sit for about 5 minutes, then stir again to make sure the chia seeds aren’t clumping.
  • Cover and refrigerate for at least 1–2 hours, or overnight for the best texture.
  • When ready to serve, give it a quick stir and add your favorite toppings. I went with coconut yogurt, blueberries, granola, coconut flakes, and a touch of honey.

Notes

  • Always stir twice  once right after mixing and again after 5 minutes. This prevents the chia seeds from clumping and ensures a smooth pudding.
  • Use full-fat coconut milk for the creamiest texture. Watery milk can leave it thin.
  • Blue spirulina has a strong pigment, so mix well or it might leave streaks in the pudding.
  • If using a jar, give it a shake after the second stir to help the texture even out.
