Apricot Overnight Oats

If you’re looking for a breakfast that feels like summer in a jar, these Apricot Overnight Oats are it. They’re creamy, fruity, and just a little fancy without any extra effort. I love waking up to this fresh, no-cook meal that’s already waiting in the fridge. The sweet apricots, warm cinnamon, and honey make every bite feel special. Plus, it’s easy to mix things up  try swapping in peaches or nectarines if apricots aren’t around.

Method

1. Mix the Base

Start by grabbing a small mixing bowl or a jar with a lid  something that will be easy to store in the fridge. Add in 1/2 cup of rolled oats, 1 teaspoon of chia seeds, and 1/4 teaspoon of ground cinnamon. Stir these dry ingredients together so the chia seeds and cinnamon are evenly spread throughout the oats. This helps with texture and flavor later on, and keeps the chia from clumping once you add the liquids.

2. Add the Liquid Ingredients

Next, pour in 3/4 cup of your favorite milk (dairy or plant-based), followed by 1 teaspoon of honey and a splash of vanilla extract. Mix everything thoroughly to make sure the oats are fully moistened and nothing settles at the bottom. The honey should be well dissolved, and you’ll want the cinnamon to blend into the milk so every spoonful is flavored just right.

3. Fold in the Creamy Part

Now it’s time to add in 1 spoonful of coconut yogurt and the freshly chopped apricots. The yogurt gives it that rich, creamy texture, while the apricots add fruity freshness. Gently stir it all together so the fruit is spread evenly and the yogurt is well mixed into the oat base. Try not to mash the fruit too much  just enough to blend everything without breaking it down.

4. Chill Time

Cover your jar or bowl with a lid or wrap, and place it in the fridge. You’ll need to let it sit for at least 3 hours, but I usually leave mine overnight for the best consistency. During this time, the oats and chia seeds will absorb the liquid and soften into a thick, pudding-like texture. This step does all the magic while you sleep.

5. Time to Top and Enjoy

When you’re ready to eat, take the oats out of the fridge and give them a quick stir to loosen them up. Then, top with a little extra coconut yogurt, some more chopped apricots, and crushed graham crackers or cinnamon sweet thins for crunch. If you like things on the sweeter side, drizzle with a bit more honey. Serve it cold and enjoy your creamy, fruity, no-effort breakfast.

  • Fresh apricots, chopped (plus more for topping)

  • Optional toppings extra coconut yogurt, more chopped apricots, crushed graham crackers or cinnamon sweet thins, and a drizzle of honey

Directions

  • Mix the Base
In a small bowl or jar, combine the rolled oats, chia seeds, and cinnamon. Give it a quick stir to evenly distribute the dry ingredients.
  • Add the Liquid Ingredients
Pour in your milk of choice, honey, and a splash of vanilla extract. Stir well to make sure everything gets coated and nothing sticks to the bottom.
  • Fold in the Creamy Part
Add a spoonful of coconut yogurt and chopped fresh apricots. Gently stir it all together.
  • Chill Time
Cover your jar or bowl and place it in the fridge. Let it chill for at least 3 hours, but overnight works best for a creamier texture.
  • Time to Top and Enjoy
When you’re ready to eat, give it a little stir. Top with more coconut yogurt, extra apricots, a sprinkle of crushed graham crackers or sweet thins, and an extra drizzle of honey if you like it sweeter.

Notes

  • Don’t skip the stirring step chia seeds need to be well mixed, or they’ll clump.
  • Make sure your jar is sealed tightly before chilling, especially if you’re taking it on the go.
  • Use ripe but firm apricots, they’ll hold their shape better and won’t turn mushy overnight
  • If you’re using flavored yogurt or sweetened milk, adjust the honey so it doesn’t turn overly sweet.

Serving Suggestions

This single-serve breakfast is great on busy mornings. You can double or triple the recipe for meal prep. If you want to change things up, try topping it with toasted nuts, seeds, or a scoop of granola for crunch. It also makes a lovely snack or light lunch on a warm day.

Fun Fact

Apricots are packed with beta-carotene, which turns into vitamin A in your body. That means they’re not only tasty but also good for your eyes and skin. Win-win!

Give it a try and don’t be surprised if it becomes your new morning obsession.
