Gluten Free 3-Ingredient Crepes

Let’s talk about crepes the kind that look super fancy but are secretly the easiest thing ever. I recently learned how to make these gluten-free 3-ingredient crepes, and honestly? I was surprised at how simple they are. You only need one bowl, one pan, and three basic ingredients to whip these up. The result is light, soft crepes that feel kind of fancy, especially when you dress them up with strawberries, coconut whip, and dark chocolate. Perfect for breakfast, brunch, or even dessert.

Method

1. Make the Batter

Start by grabbing a medium mixing bowl and cracking in one large egg. Add 1/2 cup of your preferred milk  I used almond milk  and 1/4 cup of gluten-free all-purpose flour. Using a whisk or fork, mix everything together until the batter is smooth and lump-free. The texture should be thin and runny, like pancake syrup. If your batter feels a little too thick, don’t worry just add a small splash of milk and whisk again. If it turns out too watery, sprinkle in a bit more flour to bring it back to the right consistency. You want it thin enough to swirl easily in the pan, but not so watery that it won’t hold together.

2. Cook the Crepes

Heat a non-stick skillet or lightly greased pan over medium heat. Give it a minute or two to warm up this helps the crepes cook evenly. Once it’s ready, pour a small amount of batter (about 2–3 tablespoons) into the center of the pan. Immediately lift and tilt the pan in a circular motion so the batter spreads out into a thin, even layer. Let the crepe cook undisturbed for about 1–2 minutes. You’ll know it’s ready to flip when the edges start to lift slightly and the surface looks dry and set. Use a thin spatula to gently loosen the crepe from the pan and flip it over. Cook the other side for another 30–60 seconds until lightly golden.

3. Stack and Serve

Once cooked, slide the crepe onto a plate and cover it with a clean kitchen towel to keep warm while you cook the rest. Repeat the process with the remaining batter, giving the pan a light grease between crepes if needed. When all your crepes are ready, it’s time to serve. I love mine with a layer of coconut whipped cream, fresh strawberries, and a drizzle of melted dark chocolate. But really, you can top them with anything you like sweet or savory. These crepes are like a blank canvas for whatever flavors you’re craving.

Ingredients

  • 1 large egg

  • 1/2 cup milk of choice (I used almond milk)

  • 1/4 cup gluten-free all-purpose flour (I used Bob’s Red Mill)

Directions

  • Make the batter
In a mixing bowl, whisk together the egg, milk, and gluten-free flour until smooth. The batter should be thin and runny, more like pancake syrup than cake batter. If it feels too thick, add a splash more milk. If it’s too watery, sprinkle in a bit more flour.
  • Cook the crepes
Heat a lightly greased skillet over medium heat. Pour a small amount of batter into the pan and quickly swirl it around so it coats the bottom in a thin layer. Let it cook for about 1–2 minutes until the edges lift slightly and the surface looks mostly dry. Flip gently with a spatula and cook the other side for another 30–60 seconds.
  • Stack and serve
Once done, place crepes on a plate and cover with a towel to keep warm. Then it’s topping time! I went with coconut whipped cream, fresh strawberries, and melted dark chocolate. But truly, the options are endless.

Notes

  • Don’t overmix the batter or your crepes can get rubbery. Just whisk until combined.
  • If your batter isn’t spreading easily in the pan, it may be too thick add a touch more milk.
  • Make sure your pan is hot but not smoking. If it’s too hot, the crepes will cook unevenly or brown too quickly.
  • Flip carefully and only once. These are delicate, so use a good non-stick pan and a thin spatula

Serving Suggestions

Here are a few fun ways to serve these crepes

  • Rolled with fresh berries and a drizzle of maple syrup
  • Stuffed with nut butter and banana slices
  • Folded with Greek yogurt and a sprinkle of cinnamon
  • Served savory-style with sautéed spinach and a fried egg

Fun Fact

Crepes come from France and were originally made with just water, flour, and a hot stone. Now they’re a popular dish around the world and way easier to make at home than you’d think!

Conclusion

These gluten-free 3-ingredient crepes have become one of my favorite go-to recipes when I want something quick but still fun and satisfying. They’re super customizable and a great way to use whatever toppings or fillings you have on hand. Whether you’re cooking for yourself or serving a weekend brunch spread, this is a recipe you’ll come back to again and again. Simple, pretty, and so delicious.
