Dark Chocolate Cherry Bites

If you ask me, cherry season might just be the best fruit season of the year. There’s something magical about those sweet, juicy red cherries  especially when they’re fresh and perfectly ripe. That’s why I couldn’t resist making these no-bake Dark Chocolate Cherry Bites. They’re rich, fruity, nutty, and just a little indulgent. The best part? You only need a few ingredients and a freezer.

These bites are cold, chocolatey little treasures that make summer snacking feel extra special. I grab mine straight from the freezer whenever I want something sweet but not too heavy. Let’s get into the recipe!

Method

1. Prep the Cherries

Start by thoroughly washing your fresh red cherries under cold water to remove any dirt or residue. This is especially important since you’ll be using them raw. Once they’re clean, use a cherry pitter to remove the pits from each one. If you don’t have a cherry pitter on hand, a small paring knife will work. You can slice around the pit and twist gently to remove it. Just be careful not to mash the cherries too much, as you want them to hold their shape for the bites.

2. Chop and Melt

After the cherries are pitted, use a sharp knife to chop them into small, bite-sized pieces. The smaller you chop them, the more evenly they’ll distribute in each bite and the better they’ll freeze. Set the chopped cherries aside and move on to the chocolate. Add the dark chocolate chips to a microwave-safe bowl and microwave in 20-second bursts, stirring after each interval. Continue this process until the chocolate is fully melted and smooth. This gentle method prevents the chocolate from burning and keeps it silky.

3. Assemble the Bites

Now it’s time to build the bites. Take your silicone mold or ice cube tray and spoon a little melted chocolate into the bottom of each cavity  just enough to create a base layer. Then, add a few chopped cherry pieces, a small spoonful of creamy peanut butter (you don’t need much), and a sprinkle of chopped hazelnuts. Once those are in place, spoon more melted chocolate on top to seal everything together. Gently tap the mold on the counter to even things out and remove any air bubbles.

4. Freeze

Carefully place the filled mold into your freezer and let it sit for at least 6 hours, or overnight if you can. This gives everything time to firm up completely. When the bites are frozen solid, pop them out of the mold and transfer them to a freezer-safe container. They’re now ready to enjoy anytime you want a cool, chocolatey treat.

Ingredients

  • 2 cups fresh red cherries

  • 1 cup dark chocolate chips (melted)

  • Creamy peanut butter (about 2–3 tablespoons)

  • Handful of hazelnuts (chopped)

Directions

  • Prep the cherries
Wash the cherries really well, then use a cherry pitter to remove the pits. If you don’t have one, a small knife works fine  just be careful not to squish the fruit too much.
  • Chop and melt
Chop the pitted cherries into tiny pieces. The smaller, the better, so they blend smoothly into each bite. Next, melt the dark chocolate chips in the microwave, heating in 20-second intervals and stirring in between until smooth.
  • Assemble the bites
Spoon a little melted dark chocolate into the bottom of your silicone mold or ice cube tray. Add in some chopped cherries, a tiny dollop of creamy peanut butter, and a sprinkle of chopped hazelnuts. Finish it off with more melted chocolate on top to seal everything in.
  • Freeze
Place the mold in the freezer for at least 6 hours  or overnight if you want that perfect texture. Once frozen solid, pop them out of the mold and transfer to a freezer-safe container. They’re ready to enjoy anytime!

Notes

  • Make sure the cherries are fully pitted any missed pits can be a real surprise in the worst way.
  • Chop the cherries small enough so they don’t overpower each bite or create uneven freezing.
  • Let the melted chocolate cool just slightly before layering if it’s too hot, it can melt the peanut butter and make a mess.
  • Use a good silicone mold for easy release. If you’re using an ice cube tray, line it with a bit of parchment paper for easy popping.
  • Don’t skimp on the freezer time. If the bites aren’t fully frozen, they won’t hold their shape well.

Serving Suggestions

These cherry bites are best straight from the freezer. Serve them as a quick dessert after dinner, a cool midday treat, or even alongside a cup of coffee for something fun. If you’re entertaining, place them on a chilled platter for an easy, crowd-pleasing snack.

Fun Fact

Cherries aren’t just delicious  they’re full of antioxidants like anthocyanins, which help reduce inflammation. Dark chocolate is also loaded with heart-healthy compounds. So yeah, this treat kind of feels like a little win-win.

Conclusion

These Dark Chocolate Cherry Bites are one of my favorite freezer treats to make during cherry season. They’re sweet, rich, and totally satisfying without being over the top. Plus, they look pretty cute when you pop them out of the mold. Whether you’re enjoying one solo or sharing them at a summer gathering, they’re always a hit. Give them a try and let the cherry-chocolate magic speak for itself.
