Cinnamon Apple Overnight Oats

When the weather turns crisp and apples are in season, I love starting my mornings with something cozy, creamy, and filling. These Cinnamon Apple Overnight Oats are one of my go-to fall breakfasts. They’re sweet, spiced just right, and packed with plant-based protein thanks to Ripple Unsweetened Original Plant-Based Milk. It’s like dessert for breakfast, but with all the good stuff your body actually wants. Bonus you can make them the night before and wake up to something delicious already waiting for you.

Method

1. Mix It Up

To start, grab a mason jar or any sealable container you like to use for overnight oats. Add in ½ cup of rolled oats, 1 teaspoon of chia seeds, 1 scoop of vanilla protein powder, ¼ teaspoon of cinnamon, and a pinch of salt. These dry ingredients are your base they give the oats their texture, spice, and staying power. Now pour in ¾ cup of Ripple Unsweetened Original Plant-Based Milk, followed by ½ teaspoon of vanilla extract. The Ripple milk not only adds creaminess but also gives you 8 grams of plant-based protein per serving. Stir everything thoroughly so there are no dry pockets or clumps especially if your protein powder tends to stick. Once it’s well mixed, cover the jar and place it in the fridge overnight. This gives the oats time to soak and the chia seeds time to thicken, making the whole thing soft and pudding-like by morning.

2. Make the Cinnamon Apples

While your oats chill, or just before you’re ready to eat, you can make the cinnamon apple topping. Chop up one apple into small bite-sized pieces (I leave the skin on, but you can peel if you prefer). In a small nonstick skillet over medium heat, add the chopped apple, 2 tablespoons of maple syrup, and ½ teaspoon of cinnamon. Stir to coat the apples well. Cook for about 4–5 minutes, stirring occasionally, until the apples become tender and slightly sticky from the syrup and cinnamon mix. You’re not looking for mush just soft and warm with a bit of bite left. If you want to save time in the morning, you can prepare this part the night before too and store it in the fridge.

3. Assemble

Now comes the fun part. If your oats have been chilling overnight, take the jar out of the fridge and give it a quick stir. If you prefer a warm breakfast, you can microwave the oats for about 30 seconds before adding the toppings. Spoon the warm cinnamon apples over the oats. Then add a big spoonful of peanut butter (or your favorite nut butter) on top. Finally, sprinkle on some hemp seeds for added texture and a little extra protein boost. These toppings make each bite more exciting and satisfying.

4. Dig In

That’s it your cozy fall breakfast is ready to enjoy. Whether you eat it straight from the jar or spoon it into a bowl, this is one of those meals that feels like a treat but fuels your day in all the right ways.

  • 1 scoop vanilla protein powder

  • ¼ tsp cinnamon

  • Pinch of salt

  • ¾ cup Ripple Unsweetened Original Plant-Based Milk

  • ½ tsp vanilla extract

  • For the Cinnamon Apples

  • 1 apple, chopped

  • 2 tbsp maple syrup

  • ½ tsp cinnamon

  • Toppings

  • Peanut butter (or any nut butter)

  • Hemp seeds

Directions

  • Mix It Up
In a mason jar or container, mix rolled oats, chia seeds, protein powder, cinnamon, and a pinch of salt. Stir in Ripple Plant-Based Milk and vanilla extract until well combined. Seal the jar and place in the fridge overnight.
  • Make the Cinnamon Apples
When you’re ready to eat, chop one apple and sauté it in a small pan with maple syrup and cinnamon. Cook on medium heat for 4–5 minutes until the apples get soft and sticky. You can also make these ahead and store them in the fridge.
  • Assemble
Spoon the warm (or chilled) apples over your oats. Add a spoonful of peanut butter and sprinkle with hemp seeds for that extra crunch and protein boost.
  • Dig in!
That’s it. Grab a spoon and enjoy the warm flavors of fall.

Notes

  • Don’t forget to stir Make sure you mix everything well before chilling the oats. If not, you’ll end up with dry patches or clumps.
  • Use rolled oats, not steel-cut or quick oats. Steel-cut will be too chewy, and quick oats can turn mushy.
  • Protein powder tip If yours clumps easily, mix it with the milk first before adding to the oats.
  • Apple timing Don’t overcook the apples, or they’ll get mushy. You want soft, not saucy.

Serving Suggestions

  • Hot or Cold? I like mine chilled, but you can warm the oats for 30 seconds in the microwave if you want extra coziness.
  • Swaps: Swap the apple for pear or banana. Try almond butter instead of peanut butter.
  • Add-ons: A sprinkle of granola, a drizzle of yogurt, or some chopped pecans are all great on top.

Fun Fact

Did you know apples are part of the rose family? That’s right they’re distant cousins to your garden roses! So technically, breakfast never smelled so sweet.

Conclusion

These Cinnamon Apple Overnight Oats are warm, cozy, and full of feel-good ingredients. They’re perfect for busy mornings, lazy fall weekends, or any time you want a no-fuss breakfast that still feels a little special. Plus, with Ripple Plant-Based Milk, I get the protein and creaminess I want without any sugar. Give it a try, and let your breakfast do the fall dancing for you.
