Sweet Cherry Smoothie

There’s something magical about a pink smoothie that looks like it came straight out of a dreamy café. That’s exactly why I recreated this Sweet Cherry Smoothie inspired by one of Erewhon’s famous blends, but way easier to make at home! It’s fruity, creamy, and has the prettiest pink hue thanks to beetroot powder and juicy cherries. I love whipping this up for a light breakfast, afternoon snack, or even dessert (yes, it’s that good). Let’s blend some beauty into your day!

Method

1. Prep Your Glass (Optional but Fun!)

If you want your smoothie to look as pretty as it tastes, this step is a must! Start by adding a spoonful of coconut yogurt to the bottom of your serving glass. Then, sprinkle a small scoop (about ¼ tsp) of beet root powder over the yogurt. Use the back of a spoon to gently swirl the yogurt and beet powder up along the sides of the glass. This creates a soft marbled effect that gives your smoothie that dreamy, Erewhon-style presentation. You don’t have to be perfect just have fun with it!

2. Add Ingredients to the Blender

Now it’s time to build your smoothie! In a high-speed blender, combine the frozen cherries and frozen mango or pineapple chunks first. These frozen fruits help create that thick, frosty base. Next, add your scoop of vanilla protein powder and the scoop of collagen powder for a boost of protein and glow-friendly benefits. Sprinkle in the beet root powder, which gives the smoothie its beautiful pink color and earthy-sweet flavor. Then, scoop in your coconut yogurt for creaminess, followed by a quarter of a large avocado (or half of a small one) to make the texture extra smooth. Finally, pour in one cup of your milk of choice I personally love using almond or coconut milk for a light and tropical vibe.

3. Blend Until Smooth

Start blending on a low speed to help the frozen fruit break down without overworking your blender. Gradually increase to high speed, blending until the mixture is completely smooth and creamy. Depending on your blender’s power, this can take about 30 seconds to 1 minute. Scrape down the sides if needed, and check for consistency. If the smoothie feels too thick or isn’t blending well, you can add an extra splash of milk to loosen it up. You’re looking for a rich, spoonable texture something that pours slowly and holds up to toppings.

4. Pour and Garnish

Once your smoothie is silky smooth, carefully pour it into your prepped glass. You’ll see the pink mixture settle beautifully against the yogurt and beet swirl. To finish it off, top your smoothie with a fluffy dollop of coconut whipped cream. Then, dust a little more beet root powder over the top for that final touch of color and flair. Now it looks like it came straight from a high-end smoothie bar but it’s made with love right in your kitchen!

  • Optional for garnish

  • Extra coconut yogurt

  • Beet root powder

  • Coconut whipped cream

Directions

  • Prep your glass (optional but fun!)
Add a spoonful of coconut yogurt and a tiny scoop of beet root powder to the bottom of your glass. Use a spoon to gently swirl it up the sides for a pretty effect.
  • Blend it up
Add frozen cherries, frozen mango or pineapple, protein powder, collagen, beet root powder, avocado, coconut yogurt, and milk into your blender.
  • Blend until smooth
Start on low and increase to high speed until the mixture is creamy and fully combined.
  • Pour and garnish
Pour your smoothie into the prepared glass. Top with a scoop of coconut whipped cream and a light sprinkle of beet root powder for that Erewhon vibe.

Notes

  • Don’t skip the avocado it adds that dreamy creaminess without tasting “green.”
  • Blend thoroughly to avoid grainy texture from the beet root or protein powder.
  • If your blender struggles with frozen fruit, let the fruit sit for a few minutes or add a little extra milk to get things moving.
  • The beet root powder is strong use just 1 tsp or it might overpower the flavor.

Serving Suggestions

  • Serve with a glass straw for an extra touch of style.
  • Enjoy alongside a slice of banana bread or a granola bar for a more filling meal.
  • Pop it in a mason jar with a lid and take it to-go for a post-workout treat!

Fun Fact

Beet root powder doesn’t just make this smoothie pretty it also supports blood flow and energy! Plus, cherries are rich in antioxidants and can help with muscle recovery. So yes, this smoothie is as functional as it is beautiful.
