Sweet Crunchy And A Little Bit Salty Date Bark

If you’re anything like me, you need a sweet treat now and then but you still want it to feel good-for-you. That’s where this Sweet, Crunchy, and a Little Bit Salty Date Bark comes in! It’s chewy, rich, crisp, and hits every craving in one bite. Plus, it’s made with simple, wholesome ingredients like Medjool dates, dark chocolate, peanut butter, and crunchy toppings. I finally tried the viral date bark trend, and let me tell you… it’s so worth the hype.

Even better? I grabbed all my ingredients from the bulk section at Sprouts, which means less waste and just what I need no more, no less! Let’s get into it.

Method

1. Prep the Dates

Start by preparing your Medjool dates. Take each one and slice it open halfway lengthwise just enough to remove the pit inside. Once all your dates are pitted, set them aside. You want soft, plump dates here, so if yours are a bit dry, soak them in warm water for about 5 minutes and pat them dry before using.

2. Flatten the Base

Line a baking sheet with parchment paper to prevent sticking. Place all the pitted dates cut-side down on the sheet, arranging them close together. Then, use your fingers or the back of a spoon to press the dates into a single flat layer. Take your time here you want it as even as possible, so the toppings spread nicely and the bark sets into a solid sheet.

3. Spread the Peanut Butter

Once your date base is in place, grab your creamy peanut butter (or whichever nut butter you’re using). Spoon it generously across the surface and spread it evenly using a small spatula or the back of a spoon. Make sure it reaches all the edges. This will be the glue for the chocolate layer and adds that rich, nutty flavor in every bite.

4. Melt the Chocolate

Break up your dark chocolate bar and place it in a microwave-safe bowl with a teaspoon of coconut oil. Microwave it in short 20–30 second bursts, stirring between each, until the chocolate is fully melted and glossy. If you prefer the stovetop, melt it gently in a small saucepan over low heat, stirring constantly. The coconut oil helps the chocolate melt more smoothly and gives it a nice snap once it’s chilled.

5. Pour & Top

Pour the melted chocolate right over the peanut butter layer. Use a spatula to spread it out into a thin, even coat, making sure the entire surface is covered. While the chocolate is still warm and melty, quickly sprinkle your granola and roasted salted peanuts on top. Press them in gently so they stick once frozen.

6. Freeze

Carefully transfer the baking sheet to your freezer. Let it chill for at least 1 hour, or until the chocolate has completely hardened. This is the key to getting that crisp, bark-like texture.

7. Break & Enjoy

Once the bark is fully set, remove it from the freezer. Use your hands to break it into pieces big or small, whatever you prefer. You can serve it immediately, or keep it stored in an airtight container in the freezer for the perfect grab-and-go snack.

Ingredients

  • 1 pack of Medjool dates (about 12–14)

  • Creamy peanut butter (or any nut/seed butter you love)

  • 1 bar of dark chocolate (I used Alter Eco love that their packaging is recyclable!)

  • 1 tsp coconut oil

  • Granola (I used Erin Baker’s honey oat from the Sprouts bulk section)

  • Salted roasted peanuts (also from the Sprouts bulk section)

Directions

  • Prep the dates. Slice each Medjool date open halfway and remove the pits.
  • Flatten the base. Place the dates cut side down on a parchment-lined baking sheet. Press and smush them together with your hands or the back of a spoon until they form one flat, sticky layer.
  • Spread the peanut butter. Grab your peanut butter and spread a thick, even layer over the top of the date base.
  • Melt the chocolate. In a small bowl, melt the dark chocolate with coconut oil until smooth. You can do this in short bursts in the microwave or gently over the stove.
  • Pour & top. Pour the melted chocolate over the peanut butter layer and spread it out evenly. Then sprinkle granola and roasted peanuts all over the top.
  • Freeze  Pop the whole tray into the freezer for 1 hour or until the chocolate is set.
  • Break & enjoy. Once frozen, break the bark into pieces and snack away!

Notes

  • Make sure your dates are soft and fresh if they’re dry or tough, soak them in warm water for 5 minutes and pat dry.
  • Press the date layer down firmly so the toppings don’t slide off later.
  • Don’t skip the coconut oil it helps the chocolate melt smoothly and snap better once frozen.
  • Freeze long enough for a clean break! If you rush it, the bark might crumble instead of snap.

Serving Suggestions

  • Enjoy straight from the freezer (that crunch is unreal!)
  • Add a piece to your yogurt bowl for an afternoon treat
  • Pack it in lunchboxes for a wholesome dessert
  • Serve it with fresh fruit and tea for a simple snack platter
