Matcha Chia Pudding Parfait

If you’ve ever wanted dessert for breakfast and to feel like a wellness queen, this is the recipe for you. My Matcha Chia Pudding Parfait is creamy, cozy, a little earthy, and naturally sweet basically a hug in a jar. It’s packed with good-for-you ingredients like collagen, chia seeds, and matcha, but it still tastes like a treat. I love layering it with creamy coconut yogurt, juicy fruit, and crunchy granola. It’s quick to prep, easy to customize, and perfect for busy mornings or slow afternoons.

Method

1. Whisk the Base Together

Start by grabbing a small mixing bowl. Into the bowl, pour in ½ cup of your preferred milk I used MALK Vanilla Almond Milk for a naturally sweet and creamy flavor. Add 1 teaspoon of maple syrup, a splash of vanilla extract, 1 teaspoon of ceremonial grade matcha (Matcha Kari is my go-to), and 1 teaspoon of collagen powder. Now it’s time to whisk. Use an electric whisk if you have one it helps get everything super smooth and frothy. If you’re using a regular whisk, just give it a good, vigorous mix until there are no lumps and the matcha is fully blended. This step is key for a creamy, clump-free base.

2. Mix in the Chia Seeds

Once your green matcha mixture is nice and smooth, stir in 2 tablespoons of chia seeds. It’s important to mix them in thoroughly so they’re evenly distributed and don’t settle at the bottom. I usually stir for about 30 seconds, let it sit for a minute or two, then stir again. This helps prevent clumping and ensures every spoonful has that perfect pudding texture.

3. Chill and Set

Now pour the whole mixture into a jar or container with a lid. Pop it into the fridge and let it chill for at least 2 hours. If you can leave it overnight, even better that gives the chia seeds more time to soak up the liquid and turn into a thick, creamy pudding. Don’t be tempted to skip this step; it’s what transforms your mixture from liquid to luscious.

4. Build Your Parfait

When your chia pudding is fully set, it’s time for the fun part layering! Grab a clear glass or jar so you can see all the pretty layers. Start with a spoonful of the pudding, then add a scoop of plain coconut yogurt (I love Cocojune). Layer in sliced strawberries and peaches, followed by a sprinkle of crunchy chocolate chip cookie granola (Purely Elizabeth is amazing). Repeat the layers as needed until your jar is full, and finish it off with a little drizzle of honey from Local Hive. The mix of creamy, juicy, crunchy, and sweet is just chef’s kiss.

5. Serve and Enjoy

Grab your spoon and dig in! This parfait is ready to enjoy right away, or you can seal it up and take it on the go for a busy morning. Either way, it’s nourishing, flavorful, and so satisfying.

Ingredients

  • ½ cup milk of choice (I used MALK Vanilla Almond Milk)

  • 1 tsp maple syrup

  • Splash of vanilla extract

  • 1 tsp ceremonial grade matcha (I used Matcha Kari)

  • 1 tsp collagen powder

  • 2 tbsp chia seeds

  • Toppings (my faves)

  • Cocojune Plain Coconut Yogurt

  • Sliced strawberries

  • Sliced peaches

  • Purely Elizabeth Chocolate Chip Cookie Granola

  • Local Hive Honey drizzle

Directions

  • In a bowl, whisk together the milk, maple syrup, vanilla extract, matcha, and collagen powder until it’s all smooth and frothy. If you have an electric whisk, even better!
  • Stir in the chia seeds and make sure they’re fully mixed in not clumping.
  • Pour the mixture into a jar or bowl, then cover and chill in the fridge for at least 2 hours (overnight is best!).
  • When it’s thick and pudding-like, it’s time to build your parfait.
  • Layer with coconut yogurt, fresh fruit, crunchy granola, and a drizzle of honey.
  • Grab a spoon and enjoy the magic!

Notes

  • Make sure the matcha is fully whisked before adding the chia seeds. If it’s clumpy, your pudding will be too.
  • Mix the chia seeds well to avoid chunks or dry pockets. Let it sit for a few minutes, then stir again before chilling.
  • Don’t skip the chill time! The chia seeds need time to soak and thicken properly.

Serving Suggestions

  • Serve in a clear glass or jar for that pretty layered look.
  • Add extra fruit like blueberries or kiwi for more color.
  • Want more protein? Add a scoop of vanilla protein powder to the mix.
  • Great for breakfast, post-workout snack, or a light dessert.

Fun Fact

Matcha has been used in Japanese tea ceremonies for centuries. It’s rich in antioxidants and gives you a calm kind of energy not the jittery coffee kind.

Conclusion

This Matcha Chia Pudding Parfait is everything I love easy to prep, nourishing, and packed with flavor and texture. You can make it ahead, switch up the toppings, and enjoy it any time of day. Plus, it looks super cute in a jar. Give it a try and thank me later
