This recipe is not only easy to make but also super satisfying, and it’s guaranteed to bring a smile to your face. If you’ve ever wanted to try making noodles from scratch in a creative way, then this is the recipe for you. And don’t worry, I’ll also be sharing the super tasty sauce that takes these noodles to the next level. Get ready for a delicious adventure!

Method

Make the Dough

Start by mixing the salt and plain flour in a large mixing bowl. Gradually add room-temperature water, little by little, while stirring continuously. This gradual addition of water ensures that you control the dough’s consistency and avoid it becoming too wet or dry. Keep adding water until the mixture forms a dough ball. At this point, it should feel soft but firm enough to knead. If you find the dough too sticky, add a little extra flour, and if it’s too dry, add a bit more water.

Knead and Rest

Once the dough has come together, it’s time to knead it. Begin kneading by pushing the dough with the heels of your hands, folding it over, and turning it as you go. Keep kneading for about 5 minutes until the dough becomes smooth and elastic. This process is essential to develop the structure of the dough, making it easier to cut into noodles. After kneading, cover the dough with a cloth or wrap it in plastic. Let it rest for about 30 minutes. This resting period allows the gluten to relax, making it easier to work with and yielding better noodles.

Cut the Noodles

After the dough has rested, it’s time for the fun part! Bring a large pot of water to a rolling boil. Take your rested dough and cut off small portions to roll into a ball or rough rectangle shape. Then, using your scissors, carefully snip small pieces of dough directly into the boiling water. These bits will naturally form into little pieces of noodles as they hit the water, and you’ll see them float to the surface. This is the signature “scissor-cut” method, and it’s both fun and efficient!

Cook the Noodles

Once the noodles are in the boiling water, let them cook for 6-10 minutes, depending on how thick or thin you cut the dough. The thinner the noodles, the quicker they will cook, so keep an eye on them! You can check their doneness by tasting a piece or simply watching them rise to the surface of the water. Once cooked, remove them from the pot using a strainer, and set them aside while you prepare the sauce.

Make the Sauce

While the noodles are cooking, heat 1 tablespoon of hot oil in a frying pan over medium heat. Once the oil is hot, add the minced garlic and spring onions, sautéing them until they become fragrant. This should take about 1-2 minutes. Then, add the soy sauce, black vinegar, oyster sauce, sugar, and chili sauce (if you like a little heat). Stir everything together, letting it simmer for 2-3 minutes. You want the sauce to slightly thicken up and the flavors to meld together into a savory, tangy base. Keep an eye on it to prevent it from reducing too much.

Mix It All Together

Once the noodles are cooked and drained, it’s time to bring everything together. Add the noodles directly to the pan with the sauce, and toss them well, ensuring that each piece of noodle is coated in the sauce. The hot oil, garlic, and spring onions will cling to the noodles, giving them a beautiful glaze and an irresistible aroma. If you want to take it up a notch, feel free to add extra chili powder, XO sauce, or gochujang for a more robust, fiery flavor. Let the noodles and sauce simmer together for a minute or two to let the flavors sink in before serving.

Ingredients

  • 170g plain flour (about 1 cup)

  • 85~95ml room temp water (about 1/2 cup)

  • 1/4 tsp salt

  • For the Sauce

  • 1 tbsp light soy sauce

  • 1 tbsp black vinegar

  • 1 tsp oyster sauce

  • 1 tsp sugar

  • 1-2 tsp chili sauce/chili oil (optional, for some extra heat!)

  • 1-2 tsp chili powder (add to your liking)

  • 1 garlic clove, minced

  • 1 spring onion, minced

  • 1 tbsp hot oil (for extra flavor!)

  • Cilantro (optional, for garnish)

Directions

  • Make the Dough  Start by mixing the salt and plain flour in a bowl. Gradually add the room-temperature water, stirring as you go. You’ll want to do this slowly to make sure the dough isn’t too wet or dry. Keep adding water bit by bit until it forms a ball of dough.
  • Knead and Rest  Knead the dough for about 5 minutes until it’s smooth. Once it’s ready, cover it with a cloth or plastic wrap and let it rest for 30 minutes. This makes the dough more pliable and easier to work with.
  • Cut the Noodles  After the dough has rested, bring a pot of water to a boil. Now, the fun part – use your scissors to cut little pieces of dough directly into the boiling water! I love how it looks like little drops of dough dancing around in the pot.
  • Cook the Noodles  Let the noodles cook for 6-10 minutes. The cooking time depends on how thick you cut your noodles, but mine took about 8 minutes. Keep an eye on them!
  • Make the Sauce  While your noodles are cooking, heat the hot oil in a frying pan. Add the garlic and spring onions, sautéing them until fragrant. Then, add the soy sauce, black vinegar, oyster sauce, sugar, and chili sauce. Let it all simmer together for 2-3 minutes until the sauce thickens up just a bit.
  • Mix It All Together  Once your noodles are ready, drain them and add them to the pan with the sauce. Toss them in the sauce to coat them nicely. You can also add extra chili powder or XO sauce for an even bolder flavor if you want!

Notes

  • Don’t Rush the Kneading  Be sure to knead the dough properly to get the best texture. If you don’t knead it long enough, your noodles might turn out too chewy!
  • Watch the Water  When you’re cutting the noodles into the boiling water, don’t overcrowd the pot. Make sure there’s enough space for the noodles to float freely.
  • Adjust Sauce to Your Taste  Feel free to adjust the amount of chili sauce, sugar, or vinegar depending on your personal preferences. This recipe is super flexible!

Serving Suggestions

  • Add Protein  If you’re looking to make it a fuller meal, add some grilled chicken, shrimp, or tofu on top!
  • Garnish  For a fresh twist, sprinkle cilantro on top right before serving. It adds a nice pop of color and a burst of freshness.
  • Pair with a Side  These noodles go perfectly with a side of steamed veggies or a simple salad for a well-rounded meal.

Fun Fact

Did you know that the art of making noodles by hand dates back over 4,000 years in China? Scissor-cut noodles are just one of the many traditional methods used to make fresh noodles, and they’re still widely enjoyed today! How cool is that?
