This dish is super comforting, with tender beef, perfectly cooked rice, and a beautiful egg on top. I made this with a cute little claypot I picked up in Hong Kong, and I just had to share it with you all! If you love one-pot meals, this one is sure to become your new favorite too. Method 

Marinating the Beef

Start by marinating the beef to enhance its tenderness and flavor. In a bowl, combine the thinly sliced rib eye with all the marinade ingredients: baking soda, light soy sauce, dark soy sauce, oyster sauce, a pinch of salt, minced garlic, corn starch, and neutral oil. Mix everything thoroughly so that the beef absorbs the marinade well. Let it sit aside while you prepare the rice and sauce. The marinade will help tenderize the beef and infuse it with a savory, slightly sweet flavor.

Preparing the Sauce

Carefully lift the lid, poke a few holes into the rice with a spoon, and place the marinated beef around the edges of the pot. This method allows the beef to cook evenly while infusing the rice with its flavor. Cover the pot again and cook for an additional 8-10 minutes, allowing the beef to cook through.

Cracking the Egg

Once the beef is cooked, it’s time to add the egg! Crack the egg directly into the center of the rice and beef. Drizzle a little oil around the edges to prevent it from sticking. Raise the heat to medium and cook the egg for 4-5 minutes, or until it reaches your desired consistency. If you like your yolk runny, reduce the cooking time; for a firmer yolk, let it cook a bit longer.

Once the egg is cooked to your liking, remove the pot from the heat. Open the lid and garnish the dish with fresh chives.   • Be sure to keep an eye on the rice when it’s cooking. The water should evaporate but not dry out completely. If you find the rice is sticking, add a little more water.
